Dal Cin Gelbentonite™ DC is an extraordinary fining agent, deprotenizer and stabilizer. This product is composed of activated purified bentonite filaments with very high absorbing power to give brilliance to wine at low rates. The properties of Gelbentonite are particularly suited to the fining of premium white juices and white and red wines where overfining is to be avoided.
0.1 to 0.3 g/l (10-30 g/hl) for protein stabilization and clarification
0.05 g/l(5 g/hl) for final wine clarification
0.15-0.2 g/l (15-20 g/hl) in juice
Gelbentonite DC has to be prepared in room temperature water in the ratio 1:25 (This product will adsorb water up to 20 times it’s own weight). After 30 mins the mixture is stirred rapidly to give a creamy gel which is then added to the tank during circulation to ensure adequate mixing. In most cases the product will be clarified within 48hrs.
