Emphasizes terroir character in reds and whites
Vitiferm™ Sauvage is a wild pure fermentation yeast (Saccharomyces candida) that has been carefully selected from a complete organic habitat in Hermanus, South Africa.
Known to produce wines that emphasize their local terroir, Sauvage has low nitrogen needs, high alcohol tolerance (15% v/v) and low SO2 production.
Very MLF friendly.
