ENOFERM SYRAH™ offers good mouthfeel, stable color extraction, and enhances
varietal aromas.
• Typical aromas include berry (strawberry and raspberry), plum, violet, spice,
licorice, and black pepper depending on the varietal
• Fermentations start quickly, have a moderate ongoing fermentation speed, and
low VA production
• Can produce H2
S under low YAN conditions, hence rehydration with GO-FERM
PROTECT EVOLUTION™ and nutrition management is essential
• Saccharomyces cerevisiae cerevisiae strain
• Isolated from the Côtes du Rhône region, France
