protease produced by fermentation of a Non-GM Bacillus licheniformis.
With its high endo-peptidase activity, it covers a wide range of
applications in the field of protein hydrolysis. It presents the
following benefits :
•Efficient on numerous substrates
•Completely deactivated after 15 minutes at 90°C
•Not inhibited by chelating agent such as EDT

•Allows the use of higher levels of adjuncts in the mash.
•Increases soluble protein .
•Improves free amino nitrogen levels which can lead to enhanced yeast vitality during fermentation.
•May improve downstream processing efficiencies.
Dosage
1.2 -2.4 litres/tonne of grist.
ABV Protozyme HT may be added to the mash at mashing in.
Storage
ABV Protozyme HT should be stored closed, ideally below 10˚C.
