Sulfur management and mouthfeel in red wines
Red wines fermented with Lalvin Persy™ have a balanced
mouthfeel with fruit forward persistent aromas and flavors
optimizing varietal expression.
Using good fermentation practices, Persy produces very low
to no H2S, SO2, or volatile acidity and is compatible with malolactic
bacteria.
This hybrid yeast strain was developed for use in red wines
produced from varietals naturally susceptible to H2S. It was
developed in collaboration with INRA, SupAgro Montpellier
and Lallemand.
