Very short lag phase with steady fermentation kinetics. Low foam production.

ICV OKAY has very good synergy with malolactic bacteria.

This S. cerevisiae hybrid was selected in collaboration with the INRA, SupAgro Montpellier, the ICV and Lallemand for very low to no SO2, H2S, and acetaldehyde production.
