It is a specific gluco-amylase enzyme used for saccharification, and for simultaneous saccharification and fermentation (SSF) of whole grain mashes and starch-based substrates. It reduces the risk of residual sugars at the end of fermentation and contributes to the optimization of yield. DistilaZyme® GA is proposed in an easy to dose liquid format.
pH range: 4.5-5.5
Temperature range: 25-35 oC
Dependent on amount of grain/starch liquefied in mash and fermentation conditions, recommended dose is 35-75 mL/100 kg of grain.
Please note that the optimal yeast dosage is variable according to individual distillery production processes.
DIRECTIONS OF USE
- Using a clean, sanitized and rinsed graduated container, fill with the required amount of DistilaZyme® GA.
- Add DistilaZyme® GA to the fermentation about 30 minutes after the addition of yeast at a temperature of 25-35 oC and pH range of 4.5-5.5.
- Ensure that the fermentation tank is then agitated or gently stirred to make sure DistilaZyme® GA is dispersed to ensure performance.
DistilaZyme® GA should be stored in a cool (<25oC) and dry area away from heat and direct sunlight for maximum stability.
Shelf life is 12 months if stored under 25oC. Storage approaching 12 months above this temperature may result in decreased activity where additional products may need to be dosed.
