LALVIN CY3079 (Bourgoblanc)™ is a highly complementary yeast for barrel-fermented and sur-lie aged white wines, especially those made in the classical white
burgundy style.
• Enhances aromas of fresh butter, almond, honey, flowers, and pineapple
• Autolyzes quickly at the end of fermentation resulting in round wines which are
malolactic bacteria friendly
• Steady fermentation rate but can be slow towards finish. To mitigate, ensure
GO-FERM PROTECT EVOLUTION™ is used during rehydration and wine is
mixed to keep yeast in suspension
• Saccharomyces cerevisiae cerevisiae strain
• Isolated by the Bureau Interprofessional des Vins de Bourgogne (BIVB), France
